Leftovers From The 4th

We have quite a few leftovers from this past weekend.

Hamburger meat (which went into the freezer)
Strawberries (recipe for today)
Smooshed strawberries (recipe for today)
Cheese slices (those will get used ASAP)
Mineral water
Lemons
Lemonade mix
Hamburger buns (another freezer addition)

Some items are easy to freeze (strawberries would be easy to freeze, but I decided to use them in today’s recipe.) I know a lot of people have leftovers frequently.  They are often the burden of cooking, but they don’t have to be.  Its easy to bring new life to leftovers, and to create something that is refreshing and tasty!

Growing up on the farm, leftovers were nearly every other night.  We didn’t breathe new life into these dishes, and they were often bland and stale…microwaved from the previous night, and sometimes from 2 nights prior.  Sometimes they were terrible (the worst was the chicken & bread my mom made! YUCK!).  But food is food, and it’s something I can be grateful I had as a kid.

I made today’s recipe to be a brunch or dessert.  It’s easy, and flavorful.  It’s also a beautiful dish if you have leftover pound cake, or want to make some new, and the berries bring a burst of freshness to the dish that lightens up the heavier cake.

Grilled Pound Cake With Honey Yogurt & Berries

Leftover smooshed strawberries
Strawberries
Pound cake mix

For the Yogurt Sauce
1 6 oz tub honey yogurt (or vanilla with honey added in)
1 Tbs marshmallow fluff
2 Tbs whipped cream

Mix the pound cake to the box directions.  Add in 1/2 to 3/4 cups smashed strawberries.  Mix together and bake for 1 hour in bread pan.

For the yogurt sauce-mix together yogurt, marshmallow fluff and whipped cream until fluffy.

Allow pound cake to cool. (We left ours out overnight, to harden.)  Throw on medium low grill until grill marks appear.

Top with fresh strawberries and yogurt sauce.
